This week I made crockpot oats (my favorite), baked oatmeal, oatmeal cookies, and oatmeal breakfast muffins. I also mixed in all sorts of fun ingredients to shake up my oatmeal routine.

My all time favorite oatmeal recipe is in the crockpot:
1 cup of steel cut oats
3 cups of water
1 tablespoon of cinnamon (I LOVE cinnamon)
Combine and turn on low for 8 - 9 hours. Delish!! Once I also added in a banana (yum) and apple (double yum).
I love to make this baked oatmeal recipe, and the leftovers are fantastic.

- 1 1/2c. steel cut oats
- 1/2 c. milk
- 1t. baking powder
- 1/2t. salt
- 2t. cinnamon
- 1 eggs, whisked
- 2 T. sugar (I used steevia)
- 2 T. oil
- 1t. vanilla
- 1 fruit
In a large bowl, cover the steel cut oats with about an inch of water. Allow to sit for at least 2 hours. Drain the excess water.
Mix together the oats and dry ingredients. Add the eggs, sugar, oil, and vanilla. Mix well. Fold in the fruit (add more or less depending on the size of your fruit and how fruit-laden you want your oats). Pour in a greased 9x13 casserole dish. Bake at 350 for 50 minutes.

I also mixed in peanut butter, flaxseed, hemp seed into my beloved breakfast of choice for a change-up. One day I mixed in kefir with oats soaked in apple cider vinegar and I almost barfed.....someone recommended it, but it was pretty nasty. Soaking your oats an hour before you eat them really helps bring out the nutrients in the oats. Otherwise, you are missing out on all the benefits of eating oats.
Saturday is the big ski marathon! I'm excited and scared, but you can be sure I'll be eating as much oatmeal as I can stuff in probably with some chia mixed in.

Cut up a sweet potato or some butternut squash to cook in those steel cut oats. Super good!
